Dinner ...

For the first time in a very long time, I made a nice dinner on Saturday night. I simmered a roast all day in onions, carrots and mushrooms and them made homemade mashed potatoes. Ethan ate two good size servings and kept saying how good it was and was shocked to have a "real meal." Poor guy has been deprived for almost 2 months. I was happy my hard work paid off ... but I can go the rest of my life without smelling a roast ever again ...

We have been talking about taking a "real" vacation in the spring. Before I get past the point where I can't really travel. We've talked about a couple of options, but all in all something involving a beach and laying around in the sun sounds amazing. We'll see what we find and what we can afford. My thoughts are racing to vacation on a cold day in Austin; but lucky for us living in Austin means tomorrow it will probably be 75.
